Colorful Food Trends that are Pleasing to the Eyes and Palate

The avocado toast has had its heyday, and now, a new batch of food trends are taking over Instagram.


Blue Matcha


You never expect the words “blue” and “matcha” in the same sentence, but they’re actually quite a good match. The indigo powder is made into lattes, shakes, breakfast bowls, yogurts, and even cakes. But what exactly is it? Cynthia Sass, MPH, RD, Health’s contributing nutrition editor, tells health.com, “While blue matcha is pretty, it’s important to know that it’s not simply a blue form of traditional green matcha, but rather a completely different plant altogether.” Blue matcha powder comes made from the dried flowers of the butterfly pea plant. And it offers more than just a visual treat to your Instagram feed.  “Animal research shows that [butterfly pea] may help improve memory and reduce stress, but the research is limited, and different parts of the plant—roots, stems, leaves—are used in different ways.”



Rainbow grilled cheese

The multi-colored grilled cheese sandwich first made its debut in Hong Kong (particularly in Kala Toast), until it reached the shores of the US and it became an instant hit. The different colors have different flavors according to @hkfoodiexblogger,: “lavender (blue), basil (green), tomato (red) and the yellow one is actually the combination of 4 kinds of cheese (mozzarella, cheddar, emmental and gruyere).”



Coffee in a cone

This is becoming the most Instagrammed coffee, according to founder Dayne Levinrad, the barista behind the Coffee In a Cone craze sweeping South Africa. Since launching in January, nearly 1 million images with the #coffeeinacone hashtag have been liked on the picture-sharing social media site. It’s a combination of coffee, ice cream, and chocolate, so it’s no wonder why it’s a big hit!



Mermaid toast

Yes, after the unicorn craze, which spawned into frappes, cakes, and ice cream, the mermaid is the next biggest mythological character turned into a toast. Adeline Waugh of @vibrantandpure, the food stylist behind the trend, said, “Ever since I realized that adding beet juice to food would turn it into the most magnificent shade of hot pink, I was hooked. My goal is to take healthy food and make it fun and exciting, brightening it up with a few (or many) pops of color.” She adds, “I suspected that the blue and green shades from chlorophyll and spirulina would blend together nicely and create a dreamy aquatic look. I decided to name it ‘mermaid toast’ to keep up the tradition of toasts named after mythical creatures.”
